How We Fish

All of our fish are caught one at a time, by hook and line. From the moment we land our fish, they are treated with the utmost respect; careful to avoid any bruising or de-scaling that might otherwise occur. Within minutes our fish are thoroughly cleaned, bled, and placed on ice to ensure the highest quality.
At the end of the day, we return to our headquarters to further process our catch. Our world class processing facilities are FDA-approved, and fully licensed by the relevant state and federal governing agencies to process seafood. Our fish are hand-filleted, de-boned, packaged, vacuum-sealed and flash frozen exclusively by Stormont Williams fishermen. Our fish are shipped out on a weekly basis to our distribution facilities in Dallas, Texas.
