Handling

We deliver our fish in styrofoam coolers with ice gel packs in place. Our fish should be placed in the freezer immediately upon arrival. If upon arrival, due to shipping complications we cannot control, your fish appears to have begun to thaw already, don’t panic.  As long as the core of the fish is still frozen, it is ok to place your fish in the freezer to bring it back down to temperature.  No damage has been done to your fish.

Thawing

It is very important to correctly thaw your fish before cooking.  The best method is to place your fish in the refrigerator overnight.  Frozen fish need at least six to eight hours in the fridge to thaw properly.  If you’re in a hurry, you may also place your fish in a sink filled with cold water for about 30 minutes.  Never try thawing your fish by leaving it out at room temperature, by submerging it in hot water, or by defrosting it in the microwave.

Shelf Life

Our wild Alaska fish, when kept in the freezer, will retain their quality for at least a year.  After which, the fish will remain edible, but may begin to show signs of fading with texture and flavor loss.
